Basics with Babish Livestream | Tacos

  • Cook along with me as I walk you through every step of last week's Basics with Babish: Tacos! Skirt steak with chimichurri, chorizo-potato, and chicken with rajas con crema, all served up on homemade corn tortillas and sprinkled with cotija cheese. No need to drool at your computer screen - grab the ingredients below and cook along with ya boy Babby!

    Ingredients & Grocery List:
    + For tortillas:
    2 cups Masa harina
    1 1/4 cups Water

    + For chimichurri and skirt steak:
    1 Fresno pepper
    2 Tbsp Red wine vinegar
    1/4 cup Olive oil
    Handful cilantro or parsley
    4-5 cloves garlic
    Small handful fresh oregano
    Salt and pepper
    1 skirt steak

    + For the chicken and its marinade:
    2 chicken breasts
    2 cloves garlic, roughly chopped
    2 limes, juiced
    Shakes of:
    White pepper
    Cumin
    Smoked paprika
    Oregano
    Cayenne Pepper
    Olive oil
    Salt and pepper

    + For the chorizo potato filling:
    2 russet potatoes
    Dash of white vinegar
    2 links of chorizo (casings removed)
    Vegetable oil
    Salt
    Olive oil

    + For the rajas con crema (to accompany the chicken):
    3 poblano peppers
    1/4 white onion, sliced
    Dried oregano
    1/4 cup heavy cream
    1/2 lime, juiced
    Salt and pepper

    + For the pickled radishes (to accompany the chicken):
    4 radishes, thinly sliced
    2ish cups of apple cider vinegar
    Mustard seeds, whole peppercorns, and dill (optional)

    + Other garnishes (to accompany any taco):
    Half of one white onion, diced
    Cilantro or parsley to taste
    One lime, juiced
    Cotija or feta cheese

    Special equipment:
    + For the tortillas:
    Tortilla press or large skillet
    Nonstick or cast iron skillet
    Gallon size plastic storage bag

    + For the chimichurri:
    Food processor
    Gallon plastic bag for chimichurri marinade

    raw potatoes need to be hot water drenched then salt dryed before pan frying. also, a large dose of butter and a squint of oil would be helpful to quicken thing up!

    Regarding the "potatoes browning in air" thing, potatoes oxidise due to an enzyme called polyphenol oxidase (PPO), which is heavily abundant in the cells on the outer layers of the potato. It's not exposure to air that does it, but rather the damage to the potato cells when you cut into it - the name "oxidised" comes from the action of the PPO, not the air. The PPO is released from the cells and mixes with amino acids and other products from the damaged cells, producing brown pigments. The pigments then get drawn into the porous surface of the potato and effectively dye the potato brown/black. Dropping the potato into water dilutes the PPO and other products sufficiently to prevent the formation of pigments in a significant enough quantity to be visible. Equally, when you cook the potatoes, you denature the enzyme and it can no longer function, thus no browning. This is also why flash-frozen potatoes don't brown until they thaw; the PPO enzyme doesn't work at very low temperatures.As an aside, the dyes produced from PPO are actually blue (they're quinones) but when they mix with the colour of the potato you get that weird murky brown. You might think that this is how some species of potato and plants get their natural (or bred-in) blue or purple colour, but this is much more commonly from anthrocyanins which can produce some very brilliant blues and purples. Weirdly they're also quite useful pH indicators, and the acidity or alkalinity of the vegetable's cells is often what selects the specific colour.
